North meets South meets West


We had our annual family reunion this past week in Ohio and despise the snowstorms and difficult travel conditions, everybody who was supposed to come, made it. It was an awesome weekend and even though it was very short for some people, we are glad everybody came. We all enjoyed hanging out, playing games and cooking. I am looking forward to next year's reunion.

People requested some recipes and I would like to put some of mine on the blog. If anybody else would like to contribute to the collection, please feel free to put it under comments or sent it via email.

Here are mine

Sunday Brunch casserole
1/2 pound sliced bacon
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 pound sweet italian sausage
12 eggs
1 cup milk
1 (16 ounce) package frozen hash browns
1 cup shredded Cheddar
salt, pepper
1/4 teaspoon dill weed

1. In large skillet, cook bacon over medium heat until crisp. Remove to paper towel; drain. Crumble bacon and set aside. In same skillet, saute onion and green pepper, sausage until tender and brown,; remove with slotted spoon.
2. in large bowl, whisk eggs and milk. Stir in hash browns, cheese, salt and pepper, dill, onion mix and bacon.
3. Transfer to greased 13in x 9in baking dish. Bake uncovered for 35 to 40 min (at 350F).


Brunch Strata
3 cups sliced mushrooms
3 cups chopped zucchini
1 1/2 cups chopped onions
1 1/2 cups spinach
2 gloves of garlic
1/3 cup veggie oil
2 (8oz) cream cheese
1/2 cup half and half
12 eggs
4 cups cubed bread
3 cups of cheddar
salt and pepper

1. in large skillet, saute mushrooms. zucchini, spinach, onions and garlic in oil until tender. Drain, pat dry and set aside.
2. in large mixing bowl, beat cream cheese and cream until smooth. Beat in eggs. Stir in the bread, cheese, salt and pepper and veggie mix.
3. pour into two greased 11in x7in baking dishes. Bake, uncovered for 35 to 40 min (350F)

Apple Raisin French Toast Casserole
2 cups brown sugar
2 tsp ground cinnamon
1 cup butter
6 apples (sliced)
1 cup raisins
2 loaves french baguette
12 eggs
3 cups milk
2 tbsp vanilla extract
1 tbsp cinnamon

(direction below are for half of the amount)
1. grease baking dish. In large bowl, mix together brown sugar, 1tsp cinnamon. Mix in melted butter. Stir in apples and raisins until evenly coated. Pour into prepared dish. Arrange bread slices in an even layer over apples.
2. in bowl, whisk together eggs, milk, vanilla and 2 tsp cinnamon. Pour over bread. Cover with foil and refrigerate over night.
3. preheat oven to 375F. bake covered for 40 min. Remove cover and bake 5 min.

Betsy - Nick's new love

This is Betsy. We got her yesterday. We drove to Raleigh and picked her up. She is a 1992 Range Rover County and is pimped out and ready to go off roading. I am sure Nick will post more with the details.

Bread baking


Brook has told me about that great recipe for really easy bread and I finally got a chance to try it. And I Have to say... It is super easy, super cheap and it tastes delicious. Have a look. Today we are making a pear walnut bread and a garlic cheese one too.

My new "toy"



Since I am booked for a couple of weddings (I am going to shoot with Nick as a second photographer), Nick decided to get me a camera. I was stoked. I can not wait to go out and shoot.
